Broad beans – health benefits:
Rich source of Vitamin Bs – Used in nerve function and cell development;
Good source of fibre – Beneficial for bowel and colon function;
Source of ‘Levodopa’ – This is found in one of the drugs used to treat Parkinson’s Disease. Balance is important – too little levodopa and no significant benefits are noted, too much can have adverse effects including nausea;
Nutrient rich – Iron, copper, phosphorus, potassium and magnesium. Various functions within the body including: improving blood health and the immune system function.

In season you can buy fresh broad beans in their pods.
About 900g of broad beans (in their pods) will give you approximately 200-220g of beans.

To cook the beans:
Place the ‘depodded’ beans in a pan of boiling water for 1 minute.
Plunge the cooked beans into cold water and leave to cool.
Once cool, drain the beans in a colander.

To remove the outer shell of the cooked beans:
The outer shell of the beans is a good source of fibre and texture.
But if you are making a puree, pesto or dip I would recommend removing the shell and using just the pure bean. The beans have a fantastic colour and are much prettier.

The easiest way to remove the shell is to cook the beans (as above).
Once the beans are cool, gently squeeze the bean out of the shell. You might need to make a small hole in the shell if the shell is thick.

Benefits of broad beans:

Broad beans are rich in fibre. They are also an excellent source of vitamins A and C.

Les fèves - la préparation (en français)

En saison on trouve les fèves dans une gousse, verte et longue.
Comptez 900 g de fèves en gousses pour obtenir environ 200 g de fèves en grains.

Écossez les fèves comme les petits pois. Coupez les gousses en deux dans leur longueur et détachez les grains qui se trouvent à l’interieur.

Les fèves cuites:
Faites cuire les fèves 1 minute dans une casserole d’eau bouillante. Plongez-les aussitot dans un saladier d’eau glacée.

Otez la seconde peau des fèves:
Pour ôtez la seconde peau procédez comme ci-dessus. Égouttez-les et retirez la peau en pressant les fêves entre le pouce et l'index.
